Some programs have 'child windows' that allow you to work on several files at once. Microsoft Word used to function like this, but more recently it is kept within the domain of programs like graphics and programming environments.
The Control Panel allows you to change the background colour behind these 'child' windows.

Caption Buttons are one of the terms applied to the Close, Minimize, Maximize and Restore buttons that can usually be found on the far right side of a windows' title bar. The windows appearance options allow you to increase the size of the buttons which could help people see these buttons, as well as provide an larger target area for someone to focus a pointer upon.
You can see from the screenshot on the left that increasing the size of the Caption Buttons automatically increases the title bar height. Also the change in size affects the icons in the System Tray (next to the clock), as well as the icons that appear on the Task bar buttons.

This option allows you to change the colour of the desktop. This is the backdrop of the computer that usually has a picture stretched across it. If there is no picture, or the picture only covers part of the screen, then the area is filled with this colour.
